Cooking, catering and classes

Private Chef:
     Matthew will come to your house and cook a meal of your desire and clean up.

$15 pr/hr plus the cost of food

Catering:
     After meeting and discussing the menu, services include: set-up and organizing food, preparing food items for the event, clean up, and any on-call help.

$15 pr/hr plus cost of food which would come to approximately $7 per person (this will be negotiated depending on event size and desired menu)

     I also offer event management services if you have hired a restaurant to cater, but they do not offer staff to help serve and clean up. I will be happy to fill that role at my rate of $15 pr/hr.

Classes:
     I have 8 classes to offer for various levels of skill and expertise. Each class runs about 2 hours and prices are per person. These classes are a great time to invite a small group of friends and enjoy learning new things together and have a few laughs.


Basic 1 ~  $35 per class/per person
Knife skills, stocks, vinaigrettes, chicken, potatoes

Basic 2 ~  $35 per class/per person
Knife skills, eggs, pork, vegetable cooking methods, sauces (pan, gravy, roux, slurry, brine)


Advanced 1 ~  $40 per class/per person
Knife sharpening, fish, fresh pasta, compound sauces

Advanced 2 ~  $40 per class/per person
Braise, soup, tomato sauce, reduction sauce, beef, gazpacho



Pastry/Baking ~  $35 per class/per person
Creaming method, muffin method, crepes, frosting, brittle, caramel, compote sauce



Butchery/meats ~  $50 per class/(2 1/2 hours compared to 2hr) per person
Breaking down chicken, filleting fish, cleaning shrimp, pork tenderloin, butterflying, stuff and truss


Vegetables ~  $35 per class/per person
Breaking down and using advanced cooking and techniques on vegetables: Artichoke, pomegranate, eggplant, leek, celery root, beets, brussel sprouts, shallot, garlic, identifying herbs



Pantry and leftover creations ~  $30 per class/per person
Learning to make creative dishes out of leftovers and what is lying around. Techniques and ideas to invent delicious creations.
